 Baiju Cocktail Week is running for its third year, coinciding with Chinese New Year 2016. Kicking off on the 5th February the festival, will run to the 14th to celebrate the Year of the Monkey, the naughtiest of all the Chinese zodiac signs. New baiju cocktails will be served at London bars and restaurants including Bo Drake, Hutong at The Shard, Opium, and Ping Pong Dim Sum (all eight sites), China Tang at The Dorchester, Demon, Wise & Partners, The Hide and Nam Long.
68 & Boston
I went to the Baiju Cocktail Week launch at 68 & Boston, a new Soho cocktail and wine bar that is getting some great reviews.
 But what is Baiju? It’s China’s most popular and traditional drink, a distilled white spirit, brewed using ancient techniques with fermented grains. It’s aromatic, with sweet, citrus and fermented notes and ripe plum aromas and is the  largest spirits category globally….I know …I hadn’t heard of it until last year.
Baiju cocktail68 & Boston’s Baiju cocktail is called a Pixiu-it would be a perfect as a dessert cocktail with deep caramel and chocolate notes. Here’s the recipe:
PIXIU 貔貅

15ML BAIJIU
15ML LIQUOR 43
15ML CRÈME DE CACAO DARK
6 DROPS BOBS CHOCOLATE BITTERS
35ML MOUNT GAY BLACK BARREL

SERVED WITH AN ICE DIAMOND AND GARNISHED WITH A SALTED CARAMEL RIM, AND CHOCOLATE PIECES.

 ‘Yum Sing’ (Cantonese) or ‘Gan Bai’ (Mandarin)!
